Ingredients

  • 500g Beef Mince
  • 8 Rashers Bacon
  • 1 Leek
  • 3 Large Egg Yolks
  • Flour
  • Ground black Pepper
  • 1 Onion (optional)
  • Tabasco Sauce (optional)

Method

  1. Finely chop the leek (and onion if you're using one)
  2. Slice the bacon into very small strips
  3. Alternatively blend the bacon, leek and onion together into a paste
  4. Place the minced beef into a large mixing bowl
  5. Add a tablespoon of flour
  6. Add the egg yolks
  7. Grind a small amount of pepper over the mixture
  8. Add the Bacon and Leek
  9. Add a few drops of Tabasco (if you're using)
  10. Roll up your sleeves and use your hands to mush the ingredients together until you have a big thick meatball
  11. Pull chunks off and roll into individual balls
  12. Splat each ball against a plate and use a knife to flatten the top
  13. Using greaseproof paper to seperate, stack the burgers to one side
  14. When all burgers have been shaped, cook on a hot griddle (or a barbecue) until cooked through
  15. Serve with cheddar cheese and salad in a bun
